Five easy weeknight meals for back to school season

The busses are rolling through town. Don't even get me started on a rant about how early kids start school... 

But thus begins the busy season. It will start now and end the day school gets out. It's a really long season. 

So today I wanted to share some quick and simple weeknight meals. 

Teriyaki quinoa bowl. Chicken, quinoa and a little edamame. This is so simple and easy to whip up in minutes! 

Veggie loaded spicy buffalo chicken burritos. The bulk of the work is done in your slow cooker while you're at work. Then just cook up your veggies and you're good to go. 

Chicken and black bean rollups. These are so good and remind me of Southwest egg rolls at Chilis. They are really easy to put together and are great use for leftover chicken. 

This Cilantro chicken bowl is so simple and only about $1.62 per serving. 

Sausage pepper bake. Potatoes, peppers and a little sausage. Just throw it int he pan and you're good to go.
