My slow cooker gets a lot of play, particularly in the fall. Something about the changing colors and shorter days makes me long for slow comfort foods. Today I am sharing three easy slow cooker recipes my family loves.

White Chicken Chili (double batch)

Three chicken breasts, diced

Two cans white north beans, drained

Two cans corn, drained

One medium onion, chopped

Two garlic cloves, minced

4 cups broth

2 packets chili seasoning

Add your onion and garlic to your slow cooker. Place the diced chicken on top of the onions and garlic. Add in chili seasoning. Cover in beans and corn. Add in chicken broth and put the lid on the pot. Cook on low or 6-8 hours.

Italian sausage in tomato sauce

One pound cased sausage (I like to use chicken sausage)

2 bell peppers

2 tbsp minced garlic

Italian seasonings (I used chives, oregano, fennel, and Everything But the Bagle seasoning from Trader Joe’s I don’t measure these. I just kind of dump it in until it feels right.)

One 14 oz can of tomato sauce.

Dump everything into the pot and turn it on. That’s it! Cover and let cook for 8 hours. We made tortellini to go with it and everyone loved it!!

The World’s Easiest Turkey Chili!

1/2 lb to 1 lb ground turkey, I like to brown mine first on the stove and transfer to the crockpot.

1 can red beans

1 can kidney beans

1 can crushed tomatoes

1 can tomato paste

1 packet chili seasoning

Put your meat in the crockpot and then dump EVERYTHING on top of it. Cook on low all day. I mean ALLL day. I did mine for 10 hours.

I served it with Texas Toast and everyone loves it.
