Five Week Night Meals for the Tired and Busy

My little ones are still little. Very little. I still have two under to (for the next month!). But our weeks still manage to get busy.

I know that many of you have growing children, work full time, have a long list of organizations you volunteer with etc. etc. So I thought I would share with you five of my favorite budget and family-friendly weeknight meals.

This simple recipe uses fresh ingredients for maximum flavor and can be made in minutes!

The prep time on this is minimal, just chop and go. But man is it good. (And if you hit the sale it costs about $1.25 per serving.)

This is so simple. Fresh chicken, fresh vegetables a little sauce and you've got a meal. (And no mushy vegetables.)

A little spinach a little bacon and a little time. THis is a simple meal in every sense of the word.

This is great for a meatless monday. It's LOADED with vegetables and it tastes so good.
