Cookies and Cream Pie

Cookies and cream. It's the right thing to do.

My husband had a long weekend. We don't eat dessert during the week anymore and I wanted to make a pie to celebrate the extra weekend day, which meant more dessert!

Actually I wanted to make this, Double Chocolate Peanut Butter Dessert from Simple Organized Living. But honestly, it is super hot up in this state and I was not about to turn on my oven.

So, Cookies and Cream Pie to the rescue! You don't have to turn on the oven. It's fabulous.

Okay, let's go.

What you'll need:

Crust:

18 double stuffed oreos turned into crumbs

3 tbsp butter or margarine

Filling:

8 oz container of cream cheese

8 oz tub of fat free Cool Whip

1/4 cup sugar (you can use less because the cool whip is so sweet)

1 tsp vanilla

You can crumb your cookies in your food processor. But since I don't own one I used a sandwich bag. Then beat the living day lights out of it. (You might want to double bag.)

Throw your melted butter either into your food processor or bag and beat some more.

Press the cookie crumbs into a pie pan that you sprayed with Pam.Then stick it in the freezer.

In a mixing bowl add your cream cheese, whipped topping, vanilla and sugar. If you don't want your dessert super sweet, add less sugar.

Cream it all together. I set my mixer to "whip." I threw in some leftover cookies.

Then spread the filling over the pie crust and place in the fridge for an hour or so.
