Summer is drawing to a close. Does that make you as sad as it makes me? The school year is always loaded with great activities, even for those of us who don't have kids in school, but it can be a hectic time. And I will long for the slow, easy days of summer.
So this past Thursday night our little family has an end of summer fiesta. We broke out the salsa and the avocados and together my boys and I came up with a fun and delicious recipe I hope you will love.
What you'll need:
2 cups cooked chicken (this is a great way to use up leftovers)
6 strips of turkey bacon
one cup corn
two cups cooks rice
1 cup salsa
In a skillet cook your bacon until crispy then add in your corn and chicken to warm.
Toast your taco boats for a few minutes then fill with rice and chicken, bacon and corn mixture. Garnish with salsa and avocado.
These were a big hits with our whole family and since we are ALL about the quick meals it was so easy to put together.
