Strawberry Lemonade Muffins

One of the best things about living in living in South Alabama, besides the beach, the seafood and the sunshine, is the strawberries. 

The strawberries started popping up a few weeks ago. They are juicy and red and gorgeous and this year I am hoping we get a GREAT local crop. 

I have been craving everything lemony in this pregnancy. I can't get enough lemons!!! So I decided to make some Strawberry Lemonade Muffins. 

I hope you enjoy this recipe. I kind of made it on the fly yesterday as my sweet, but pantless, assistant chef slacked off in the kitchen. 

What you'll need:

2 cups all-purpose flour

1 cup sugar

1 tablespoon baking powder

2 eggs

1 cup milk (I recommend 2 percent)

1/2 Greek Yogurt 

1 teaspoon lemon juice

1 teaspoon vanilla extract

2 cups strawberries 

Preheat your oven to 350 and line 24 muffin cups. 

Combine your flour, sugar and baking powder in a bowl. Mix it up. 

In a separate bowl beat your eggs, add your milk, vanilla and lemon jucie. Next add in your Greek Yogurt. I used non-fat vanilla. 

Fold in your strawberries. 

Then give it all a good mix! You will need rubber spatula to scrape the mix into the muffin cups.

Bake at 350 for about 15 minutes!

They are very good and not too sweet. You could even add a little lemon glaze (just milk, lemon juice and confectioners sugar) for even more sweetness.
