Steak and mixed greens. What a delightful combination? I am trying to cook a few more healthy recipes.
I have to be honest, I am not a huge red meat fan, so I am learning how to cook it.
Earlier this week I made a London Broil. Now some of you may argue that London Broil is how you cook meat, not a cut of meat. All I know is that the good people at my local Winn-Dixie labled this cut London Broil aaaand they marked it BOGO. So I got about 5 pounds of meat for $5!
I wanted a way to cook it that would be healthier and delicious. So I cooked it in butter. Okay, okay, okay, butter isn't the most healthy thing in the world. But we are doing the whole low carb/no sugar crap. So cut me some slack.
What you'll need:
About 2 lbs London Broil
4 tbsp unsalted butter
1 tbsp lemon juice
1/4 tsp kosher salt
4 -8 cups mixed greens
1/2 cup bleu cheese divided into fourths (that is 2 tbsp a serving)
dressing of your choice
Fire up your George Foreman and let's get down to business.
Butter! Butter! Butter!
In a sauce pan melt your butter and let simmer until brown and nutty smelling. Add in your lemon juice and salt and pepper.
Pour over cut of meat and place London Broil on the grill. Let grill until desired temperature or until only slightly pink inside. (Ever so slight.) (I let my meat grill a little before pouring the butter sauce.)
Cut steak into strips and place over your mixed greens. Add avocado and cheese and drizzle with your desired dressing.
