Lime Cilantro Fish Tacos

Good morning! It truly is a good morning in this house because baby boy slept til 7:15! That never happens. He is more of a 5:30 a.m. kinda guy. So I was up, I had the laundry going, the coffee was being sipped and the emails had all been answered when I finally heard him announce he was awake.

It was magical!

Anyhoo- in celebration of this momentous occasion let's do some cookin'.

I really like fish tacos, they are light, simple and cheap. The Panko Crusted Tilapia Taco is my fav, but sometimes I want something even simpler.

So I decided to make an easier version this past week. In this case you just broil the fisth and throw it on a tortilla. In my house we are debating which tastes better flour tortilla or corn. We are deeply divided on this issue.

What you'll need:

2 -4 tilapia filets (depending on the size)

1 lime

olive oil




Sour Cream etc. etc.


Turn your broiler on medium to high.

Drizzle the fish with your olive oil and squeeze that lime over the fish. Sprinkle with cilantro.

Broil for about 10 minutes. If you don't have a broiler you can bake for 20 minutes at 350.

Once your fish is flakey and delicous pull apart with your fork. Add more lime juice if you wish. I also went ahead and added a little salsa here. I used White Diamond Salsa becuase I got it on sale at Publix, also it is delicous.

Place on your tortilla with cheese and sour cream and what ever else you like on your taco, sit back and enjoy. We actually didn't use sour cream. We used some Tzatziki sauce I had made using this recipe from Romance on a Dime.
