Do you love ravioli? I do. It's like a treat of a pasta. It's like a teeny, tiny piece of lasagna that I didn't have to make myself.
I made this recipe last year and my husband cheered. (Note: I made it with tortileni.) It combines tiny ravioli, Italian Dressing, sausage and roasted tomatoes.
Last week Publix had Buitoni Four Cheese Ravioli on sale for $1.99. I am sure I couldn't make it from scratch for that. This week they had their Butterball Turkey Sausage on sale for about $1.85 after my coupon.
Thanks Southern Savers for telling me about all those good deals!
And to top it all off I also got the cherry tomatoes I needed to roast on sale at... where else... Publix.
This makes a ton of pasta! I mean a ton. With pleanty of leftovers for lunch and what not. So you could cut down on the pasta and be fine.
What you'll need:
2 packages Buitoni Ravioli or Tortellini - this is found in the cooler case next to the cheese.
Half a package of Turkey sausage
1 pint cherry tomatoes
Half a bottle of Italian dressing. Or you can do like me and make your own using this recipe.
1 cup steamed edamame (optional)
Preheat your oven to 350. And dig a pot and skillet out of the cabinet. They are in the back. Behind the standing mixer. There you go! You found them!
Cook the pasta according to the instructions on the pasta. Do NOT add oil and do NOT rinse.
You can steam or edamame in the microwave by putting it in a bowl covered with a wet paper towel. Heat for about 3 minutes.
Prepare a baking sheet. Slice your tomatoes in half and place them on the baking sheet. Roast in oven for 20-30 minutes.
Spray your skillet with Pam or warm some olive oil in it. Dice your sausage into cubes and throw in the skillet. You will want to cook the sausage over a HIGH heat to make sure it gets good and crisp.
Once your pasta is done cooking and your tomatoes and sausage are finished mix them all together in a bowl. Add your edamame if your using it.
Drizzle the Italian dressing over the top of your pasta, sausage, tomato mixture and stir.
