Today I wanted to share this simple recipe I made last week with the kids. Clearly they LOVED helping.
One of the biggest things I hear is how expensive groceries are. But today I wanted to share one of our favorite recipes at our house and the best part is it's wholesome and CRAZY cheap.
This recipe features brown rice, fresh salsa and my favorite avocados!
This bean and rice casserole is a great pantry meal. I adapted this recipe from Eat Live Run.
Brown Rice ($.18 per uncooked cup)
two cups cooked beans ($.32)
taco seasoning ($.75 or you can make homemade)
1 cup salsa ($1)
Water, vegetable stock, or chicken stock - ($0)
Avocado for garnish ($1 picked up at Publix)
Total cost: $3.25 or just $.54 a serving (6 servings!)
It's so easy to get started. Ryals poured the rice and taco seasoning into a glass pan and then we gave everything a good stir.
Next we added in our water, beans and salsa. Again, we stirred.
Then I covered the pan in tin foil and made sure it was covered super tight.
Cook the casserole at 350 for 90 minutes.
Then we garnished with Avocado. Avocados are my favorite. I could eat them morning noon and night. And they add such a creaminess to the dish. I just eat mine plain, diced up on top.
Or you could whip up this avocado lime dressing to pour on top.
